Grafton Village Cheese Company, LLC - Brattleboro, Vermont

Food Tech provided architectural design and engineering for the cheese process plant facility.

Grafton Village Cheese Company needed design-build services on a new state-of-the-art cheese process plant with a focus on cold storage construction and food sanitation design engineering. Food Tech was selected for the project because of their expertise in refrigeration engineering and experience designing dairy processing plants that meet even the highest food safety standards.

The completed 30,000-square-foot facility features pre-engineered steel frames with internal cooler and production boxes as well as an industrial refrigeration system. Food Tech’s approach focused on cost-savings while still satisfying rigorous United States Department of Agriculture (USDA), Hazard Analysis and Critical Control Points (HACCP), Safe Quality Food (SQF), and Food Safety Modernization Act (FSMA) standards. Food Tech also provided architectural design and engineering for the facility. The plant’s exterior was inspired by the New England barns which dot the Vermont landscape and provides a welcoming façade for visitors observing Grafton’s production or shopping at the attached retail store.

During this project, Food Tech delivered the following:

  • Turnkey, design-build services
  • Raw milk receiving silos
  • Process engineering for cheese production
  • Cold storage insulation design
  • Refrigeration engineering
  • Industrial refrigeration system
  • USDA, HACCP, SQF, and FSMA compliant design engineering
